Amidated pectin is a chemically modified form of low methoxyl pectin (LMP) where some of the carboxyl groups (–COOH) are converted to amide groups (–CONH₂). This modification improves its gelling ability, especially in low sugar and low pH environments, making it highly useful for food and pharmaceutical applications.
